Preheat your oven to 375°F.
Core the apple and slice it into thin, even wedges.
Place the apple slices in a small baking dish, toss with 0.25 tsp of the cinnamon and a teaspoon of water, then cover the dish tightly with foil.
Bake the apples for 20 minutes or until they are soft and fragrant.
While the apples bake, combine the rolled oats, chopped walnuts, coconut oil, maple syrup, sea salt, and the remaining cinnamon in a small bowl.
Spread the oat mixture onto a parchment-lined baking sheet and toast in the oven for 5 to 8 minutes until golden brown and crisp.
In a separate bowl, whisk together the non-fat Greek yogurt, vanilla protein powder, and vanilla extract until the mixture is smooth and creamy.
To serve, spoon the vanilla protein cream into a bowl, layer the warm baked apples on top, and finish with a generous sprinkle of the toasted oat crumble.
