Garlic Herb Chicken Penne Pasta
Sautéed chicken and whole wheat penne tossed in a fragrant garlic-herb oil with wilted spinach and bursting cherry tomatoes.
INGREDIENTS
5 oz Boneless skinless chicken breast
1.5 oz Whole wheat penne pasta
0.5 tbsp Extra virgin olive oil
2 cloves Garlic
1 cup Fresh baby spinach
0.5 cup Cherry tomatoes
1 tbsp Grated parmesan cheese
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Dried oregano
1 tbsp Fresh parsley
PREPARATION
Bring a large pot of salted water to a boil and cook the whole wheat penne according to package directions until al dente.
While the pasta cooks, dice the chicken breast into bite-sized pieces and season with sea salt, black pepper, and dried oregano.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes until golden brown and cooked through.
Mince the garlic and halve the cherry tomatoes, then add them to the skillet with the chicken, sautéing for 2 minutes until the garlic is fragrant.
Drain the pasta, reserving 2 tablespoons of pasta water, and add both to the skillet along with the fresh baby spinach.
Toss everything together for 1 minute until the spinach is just wilted and the pasta is well coated.
Remove from heat and garnish with grated parmesan cheese and freshly chopped parsley before serving.
