Truffle Mushroom Linguine with Parmesan
Sautéed earthy mushrooms and tender chicken breast tossed with linguine in a fragrant truffle-infused sauce, finished with a dusting of sharp, nutty parmesan.
INGREDIENTS
4.5 oz Chicken breast
1.5 oz Whole wheat linguine
2 cup Cremini mushrooms
1 tsp Olive oil
1 tsp Truffle oil
2 tbsp Parmesan cheese
1 clove Garlic
1 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Boil a pot of salted water and cook the linguine according to package directions until al dente. Reserve 1/4 cup of pasta water before draining.
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Season chicken strips with half the salt and pepper, then sear until golden and cooked through. Remove chicken from the pan.
In the same skillet, add the sliced mushrooms and cook until they release their moisture and become deeply browned.
Add the minced garlic to the mushrooms and sauté for 1 minute until aromatic.
Return the chicken to the skillet. Add the cooked linguine, reserved pasta water, and truffle oil.
Toss everything together over low heat until the liquid creates a light, silky sauce that coats the noodles.
Stir in the chopped parsley and half of the parmesan cheese.
Serve immediately, garnished with the remaining parmesan and an extra crack of black pepper.
