Tuna Avocado Salad on Fried Plantains
Crispy pan-fried plantain rounds topped with a zesty tuna and creamy avocado salad, finished with a bright squeeze of lime for a refreshing crunch.
INGREDIENTS
6 oz Canned tuna in water
0.5 medium Green plantain
0.25 whole Avocado
2 tbsp Plain Greek yogurt
0.5 tbsp Avocado oil
1 tbsp Red onion
1 tbsp Celery
1 tbsp Fresh lime juice
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh cilantro
PREPARATION
Peel the green plantain and slice into 1/2-inch thick rounds.
In a large skillet, heat the avocado oil over medium-high heat.
Place plantain rounds in the skillet and fry for 3-4 minutes per side until golden brown.
Remove plantains from the skillet and lightly press them with the bottom of a glass to flatten, then return to the pan for 1 minute per side until extra crispy.
In a medium bowl, combine the drained tuna, Greek yogurt, finely diced red onion, finely diced celery, and lime juice.
Gently fold in the diced avocado, sea salt, and black pepper until well mixed but still chunky.
Scoop the tuna avocado salad onto the warm, crispy plantain rounds.
Garnish with chopped fresh cilantro and serve immediately.
