Seared Salmon Fillet with Roasted Broccoli and Garlic Mashed Cauliflower
Pan-seared sockeye salmon served with crispy roasted broccoli and creamy garlic-infused cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
6.2 oz Sockeye Salmon Fillet
1.5 cups Broccoli Florets
2 cups Cauliflower Florets
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic
1 tsp Lemon Juice
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil and a pinch of salt, then spread them on the baking sheet and roast for 15-20 minutes until the edges are crispy.
While the broccoli roasts, steam the cauliflower florets in a steamer basket over boiling water until they are very tender, about 10-12 minutes.
Transfer the steamed cauliflower to a food processor or blender with the minced garlic and the remaining olive oil, blending until the mixture is smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon skin-side up for 3-4 minutes, then flip and cook for another 3 minutes until golden and cooked through.
Plate the salmon over a generous bed of garlic cauliflower mash, serve the roasted broccoli on the side, and finish with a fresh squeeze of lemon juice.
