6 ounces Wild Atlantic Salmon Fillet
150 grams Sweet Potato, cubed
1 cup Fresh Green Beans, trimmed
2 teaspoons Extra Virgin Olive Oil
1 clove Garlic, minced
1/2 Lemon, for finishing
PREPARATION
Peel and cube the sweet potato, then boil in a pot of salted water until tender, about 12-15 minutes.
Drain the sweet potato and mash thoroughly until smooth, seasoning with a pinch of sea salt and black pepper.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and flaky.
Remove the salmon from the pan and set aside.
