Herb-Crusted Salmon with Roasted Vegetables
Oven-roasted salmon fillet topped with a fragrant herb crust, served alongside vibrant charred bell peppers and tender broccoli florets.
INGREDIENTS
6 oz Salmon fillet
1 cup Broccoli florets
1 cup Red bell pepper
1 tbsp Extra virgin olive oil
1 tbsp Dijon mustard
1 tsp Dried oregano
1 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a small bowl, whisk together the Dijon mustard, dried oregano, dried thyme, and half of the olive oil to create the herb paste.
Place the salmon fillet on one side of the prepared baking sheet and spread the herb paste evenly over the top of the fish.
Toss the broccoli florets and sliced bell peppers with the remaining olive oil, sea salt, and black pepper in a bowl until well coated.
Arrange the seasoned vegetables in a single layer on the other side of the baking sheet.
Roast in the oven for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender with slightly charred edges.
Remove from the oven and drizzle the fresh lemon juice over the salmon and vegetables before serving.
