In a small mixing bowl, whisk together the fat-free cottage cheese, garlic powder, dried oregano, sea salt, and black pepper until the mixture is relatively smooth.
In a medium baking dish, combine the cooked orzo, the sausage and vegetable mixture, and the seasoned cottage cheese sauce, stirring until everything is evenly coated.
Spread the mixture into an even layer and sprinkle the fat-free shredded mozzarella cheese over the top.
Bake for 15-20 minutes until the cheese is melted and the sauce is bubbling around the edges.
