PREPARATION
Pat the scotch fillet dry with paper towels and season both sides with half of the sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add the ghee.
Sear the steak for 3-4 minutes per side for medium-rare, adding smashed garlic cloves to the pan during the last 2 minutes to baste the meat.
Remove the steak from the pan and let it rest on a cutting board for 5 minutes.
In the same skillet, add the corn kernels and sauté for 3 minutes until slightly charred.
Stir in the baby spinach until just wilted, then remove the skillet from the heat.
Fold in the Greek yogurt to create a creamy texture and season with the remaining sea salt and black pepper.
