Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over a velvety sweet potato mash with crisp-tender green beans sautéed in fragrant garlic.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
120g Sweet Potato (peeled and cubed)
1.5 cups Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic (minced)
PREPARATION
Place the cubed sweet potato in a pot of water and bring to a boil, cooking for 10-12 minutes until fork-tender.
Drain the sweet potatoes and mash until smooth, adding a pinch of sea salt and a splash of the cooking water for a velvety consistency.
Season the salmon fillet with sea salt and black pepper on both sides.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet and sear for 4-5 minutes on the first side to develop a golden crust.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145°F, then remove from the pan to rest.
In the same skillet, add the green beans and minced garlic with a tablespoon of water, sautéing for 3-4 minutes until crisp-tender.
Plate the sweet potato mash alongside the green beans and top with the seared salmon fillet.
