Spinach Ricotta Stuffed Shells Baked Marinara
Baked jumbo pasta shells filled with a creamy spinach and turkey-ricotta blend, smothered in vibrant marinara sauce until the cheese is bubbly and golden.
INGREDIENTS
1 count jumbo pasta shells
4 oz ground turkey
0.25 cup part-skim ricotta cheese
1 cup fresh baby spinach
1 large egg white
0.5 cup marinara sauce
0.5 oz part-skim mozzarella cheese
1 tbsp grated parmesan cheese
0.25 tsp sea salt
0.25 tsp black pepper
0.25 tsp garlic powder
0.25 tsp dried oregano
PREPARATION
Preheat your oven to 375°F (190°C).
Cook the jumbo pasta shells in a large pot of boiling water for 2 minutes less than the package directions until slightly firm, then drain and set aside.
In a non-stick skillet over medium heat, cook the ground turkey until browned and crumbled, then remove from heat.
Roughly chop the fresh baby spinach and stir it into the warm turkey until it begins to wilt.
In a medium mixing bowl, combine the turkey and spinach mixture with the ricotta cheese, egg white, sea salt, black pepper, garlic powder, and dried oregano.
Spread half of the marinara sauce across the bottom of a small oven-safe baking dish.
Carefully stuff each cooked pasta shell with a generous amount of the turkey and ricotta mixture and place them into the baking dish.
Spoon the remaining marinara sauce over the shells and sprinkle evenly with mozzarella and parmesan cheese.
Cover the dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 5 to 10 minutes until the cheese is melted and bubbly.
