7 oz Salmon fillet
1 cup Asparagus spears
0.5 tbsp Extra virgin olive oil
1 tbsp Fresh parsley
1 tbsp Fresh dill
1 clove Garlic
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and place them on one side of the baking sheet.
Finely mince the garlic, parsley, and dill, then combine them in a small bowl with half of the olive oil and the lemon juice.
Pat the salmon fillet dry with a paper towel and place it on the other side of the baking sheet.
Season both the salmon and asparagus with sea salt and black pepper.
Drizzle the remaining olive oil over the asparagus and toss to coat evenly.
Spread the herb and garlic mixture over the top of the salmon, pressing down slightly to create a crust.
Bake for 12-15 minutes until the salmon is flaky and the asparagus is tender and lightly browned.
