Garlic Herb Pork with Sautéed Mushrooms
Pan-seared pork tenderloin medallions infused with fragrant rosemary and garlic, served alongside earthy sautéed mushrooms and crisp green beans.
INGREDIENTS
8 oz Pork tenderloin
2 cups Cremini mushrooms
1 cup Green beans
1 tbsp Extra virgin olive oil
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Slice the pork tenderloin into 1-inch thick medallions and season both sides with sea salt and black pepper.
Heat half of the olive oil in a large skillet over medium-high heat until shimmering.
Add the pork medallions to the skillet and sear for 3 to 4 minutes per side until golden brown and cooked through, then remove and set aside to rest.
In the same skillet, add the remaining olive oil along with the sliced mushrooms and trimmed green beans.
Sauté the vegetables for 5 to 6 minutes until the mushrooms are browned and the green beans are tender-crisp.
Stir in the minced garlic, chopped rosemary, and thyme, cooking for an additional 1 minute until highly aromatic.
Return the pork to the pan briefly to toss with the herbs and vegetables before serving warm.
