Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served with crisp garlic-scented green beans and nutty brown rice, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Salmon Fillet
0.4 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions and set aside.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat a non-stick skillet over medium-high heat and lightly coat with a small amount of oil spray.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 3-4 minutes until opaque.
While the salmon cooks, heat the olive oil in a separate skillet over medium heat.
Add the green beans to the skillet and sauté for 5 minutes until tender-crisp.
Add the minced garlic to the beans and cook for 1 minute until fragrant.
Plate the salmon alongside the brown rice and garlic green beans.
Drizzle the lemon juice over the salmon and beans just before serving.
