Season the chicken breast with the remaining sea salt and black pepper on both sides.
Heat the remaining olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and sear for 5 to 6 minutes per side, or until the internal temperature reaches 165°F.
Reduce the heat to medium and pour the orange juice mixture into the skillet with the chicken.
Simmer the sauce for 2 to 3 minutes, spooning it over the chicken continuously until the glaze has thickened and looks glossy.
Plate the chicken alongside the roasted carrots and drizzle any remaining glaze from the pan over the top.
