Baked Ricotta Shells with Marinara
Baked jumbo pasta shells stuffed with savory turkey and herb-flecked ricotta, smothered in a vibrant marinara sauce that bubbles in the oven.
INGREDIENTS
3 large Jumbo pasta shells
4 oz 93% lean ground turkey
0.25 cup Part-skim ricotta cheese
1 large Egg
1 cup Fresh spinach
0.5 cup No-sugar-added marinara sauce
1 tbsp Grated parmesan cheese
1 clove Garlic
0.25 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Extra virgin olive oil
PREPARATION
Preheat your oven to 375°F.
Boil the jumbo pasta shells in salted water for 2 minutes less than the package directions until al dente, then drain and set aside.
Heat olive oil in a skillet over medium heat and sauté the minced garlic and ground turkey until the meat is browned and cooked through.
Add the chopped spinach to the skillet and stir until just wilted, then remove from heat to cool.
In a medium mixing bowl, combine the cooled turkey and spinach mixture with ricotta cheese, egg, oregano, sea salt, and black pepper.
Spread half of the marinara sauce across the bottom of an 8x8 inch baking dish.
Stuff each cooked shell with a generous portion of the ricotta-turkey mixture and arrange them in the baking dish.
Spoon the remaining marinara sauce over the shells and sprinkle with grated parmesan cheese.
Cover the dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until the sauce is bubbly.
