In a large mixing bowl, combine the ground chicken, pulsed cauliflower, egg, almond flour, garlic powder, onion powder, sea salt, and black pepper.
Mix thoroughly by hand and form the mixture into approximately 12 small, uniform bite-sized balls.
Arrange the bites on the prepared baking sheet and bake for 18-20 minutes, or until the internal temperature reaches 165°F and the outsides are golden.
While the bites bake, prepare the dip by whisking together the Greek yogurt, blue cheese crumbles, and lemon juice in a small bowl.
In a separate small bowl, melt the ghee and whisk it together with the buffalo sauce.
Once the bites are finished baking, transfer them to a bowl and gently toss with the buffalo ghee mixture until evenly coated.
Serve the warm buffalo bites immediately with the chilled blue cheese dip on the side.
