Slice the chicken breast into thin, even strips and place them in a medium mixing bowl.

Heat the remaining 0.5 tbsp olive oil in a large non-stick skillet over medium-high heat.
Add the chicken to the skillet and sear for 6 to 8 minutes, turning occasionally, until the edges are golden brown and the meat is cooked through.
While the chicken is searing, dice the cucumber, halve the cherry tomatoes, and finely slice the red onion.
Place the warm cooked basmati rice in the bottom of a large bowl.
Arrange the spiced chicken and fresh vegetables over the rice, then top with a dollop of Greek yogurt and a garnish of chopped parsley.
