Pan-Seared Cod with Lemon-Herb Rice
Flaky pan-seared cod fillets seasoned with garlic and lemon, served over a bed of fragrant herb-flecked jasmine rice for a bright and zesty finish.
INGREDIENTS
8 oz Cod fillet
0.5 cup Cooked jasmine rice
1 tbsp Extra virgin olive oil
1 tbsp Fresh parsley
1 tbsp Fresh chives
1 tbsp Lemon juice
1 tsp Lemon zest
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
2 cups Baby spinach
PREPARATION
Pat the cod fillets dry with a paper towel and season both sides with the sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the cod in the skillet and sear for 3 to 4 minutes per side until the exterior is golden and the fish flakes easily with a fork.
Transfer the fish to a plate and lower the skillet heat to medium.
Add the remaining olive oil and minced garlic to the pan, sautéing for 30 seconds until fragrant.
Toss in the baby spinach and cook for 1 minute until just wilted.
Stir in the cooked jasmine rice, lemon juice, lemon zest, fresh parsley, and fresh chives until well combined and heated through.
Plate the lemon-herb rice and top with the pan-seared cod fillets.
