Preheat your oven to 350°F (175°C) and lightly grease a standard muffin tin with the olive oil.
In a small skillet over medium heat, cook the ground turkey sausage until fully browned and crumbly, then set aside to cool slightly.
Finely chop the fresh spinach and the red bell pepper into small, uniform pieces.
In a medium mixing bowl, whisk the eggs together with the sea salt, black pepper, garlic powder, and onion powder until the mixture is frothy and well combined.
Stir the cooked turkey sausage, chopped spinach, and diced bell peppers directly into the egg mixture.
Carefully pour the mixture into the prepared muffin cups, filling each one about three-quarters of the way to allow for rising.
Bake for 20 to 25 minutes, or until the eggs are set in the center and the edges are starting to pull away from the tin.
Remove from the oven and let the cups rest in the tin for 5 minutes before using a knife to gently pop them out and serve.
