Pan-Seared Tofu with Soft-Boiled Eggs and Mixed Greens
Golden pan-seared tofu and jammy soft-boiled eggs served over a bed of crisp mixed greens with a savory tamari-sesame drizzle.
INGREDIENTS
10 oz Firm tofu
2 large Eggs
2 cups Mixed greens
0.25 tbsp Extra virgin olive oil
1 tbsp Tamari
0.5 tsp Toasted sesame oil
2 tbsp Nutritional yeast
1 tbsp Pumpkin seeds
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a small pot of water to a boil, then carefully lower the eggs into the water and simmer for 6 minutes and 30 seconds.
Immediately transfer the eggs to an ice bath for 5 minutes, then peel and set aside.
Press the tofu with a heavy object for 10 minutes to remove excess moisture, then cut into 1-inch cubes.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the tofu cubes until golden brown and crispy on all sides.
Drizzle the tamari over the tofu in the pan, tossing quickly to coat until the liquid has evaporated and the tofu is glazed.
In a large bowl, toss the mixed greens with the toasted sesame oil and nutritional yeast until evenly coated.
Divide the greens between plates and top with the seared tofu and the soft-boiled eggs sliced in half.
Garnish with pumpkin seeds, sea salt, and black pepper before serving.
