Seared Salmon Fillet with Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon with crispy skin served over garlic mashed cauliflower and tender asparagus with a bright squeeze of lemon.
INGREDIENTS
8.8 oz Salmon Fillet
1 cup Asparagus
2 cups Cauliflower florets
1 tsp Ghee
2 tbsp Non-fat Greek Yogurt
1 clove Garlic
PREPARATION
Steam the cauliflower florets until they are very tender, approximately 10 to 12 minutes.
While the cauliflower steams, season the salmon fillet with a pinch of sea salt and black pepper.
Heat half of the ghee in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the skin is crispy and the center is just opaque.
In a separate pan, sauté the asparagus with the remaining ghee and a splash of water until it is tender-crisp and bright green.
Drain the cooked cauliflower and place it in a food processor or blender with the raw garlic and Greek yogurt, then pulse until smooth and creamy.
Plate the mashed cauliflower, top with the seared salmon fillet, and serve the asparagus on the side with an optional squeeze of fresh lemon.
