1 cup Asparagus
0 tbsp Ghee
0 tbsp Olive oil
2 cloves Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh rosemary
PREPARATION
Remove the steak from the refrigerator 30 minutes before cooking to reach room temperature.
Pat the steak dry with paper towels on both sides and season evenly with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat until very hot, then add the olive oil.
Place the steak in the skillet and sear for 3-4 minutes until a deep golden crust forms.
Flip the steak and immediately add the ghee, smashed garlic cloves, and fresh rosemary to the pan.
Tilt the pan slightly and use a large spoon to continuously baste the steak with the melted garlic butter for another 3-4 minutes.
Remove the steak from the pan and let it rest on a cutting board for at least 5-8 minutes.
While the steak rests, add the trimmed asparagus to the same pan and sauté in the remaining garlic butter for 4-5 minutes until tender-crisp.
