PREPARATION
Place a large skillet over medium-high heat and cook the ground turkey with minced garlic, grated ginger, sea salt, and black pepper until the meat is browned and cooked through.
While the turkey is browning, bring a medium pot of water to a boil and cook the soba noodles according to the package directions, adding the chopped baby bok choy to the water for the last 60 seconds of cooking.
In a small mixing bowl, whisk together the tahini, tamari, rice vinegar, toasted and ground Sichuan peppercorns, and chili oil until the sauce is smooth and emulsified.
