Spiced Potato and Pea Samosas with Chutney
Crispy baked whole wheat triangles filled with savory spiced turkey, potatoes, and peas, served with a refreshing and creamy mint-yogurt chutney.
INGREDIENTS
3 oz Ground turkey
0.25 cup Gold potato
2 tbsp Green peas
0.25 tsp Olive oil
0.5 cup Non-fat Greek yogurt
1 tbsp Fresh mint
1 tbsp Fresh cilantro
0.25 tsp Cumin seeds
0.25 tsp Turmeric
0.25 tsp Garam masala
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 medium Whole wheat tortilla
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
In a non-stick skillet over medium heat, add the olive oil and cumin seeds until they begin to sizzle and smell fragrant.
Add the ground turkey and finely diced gold potato to the skillet, sautéing until the turkey is fully browned and the potato bits are fork-tender.
Stir in the green peas, turmeric, garam masala, sea salt, and black pepper, then remove from heat to let the filling cool slightly.
Cut the whole wheat tortilla into three equal rectangular strips.
Place a portion of the turkey and potato mixture at the bottom of a strip, then fold the corner over to form a triangle, continuing to fold until the strip is used.
Lightly brush the edges with a tiny bit of water to seal the samosas and place them on the prepared baking sheet.
Bake for 10-12 minutes until the tortilla edges are golden and crisp.
While the samosas bake, whisk together the Greek yogurt, chopped mint, and chopped cilantro in a small bowl to create the cooling chutney.
