Garlic Herb Roasted Beef Tenderloin
Beef tenderloin roasted with a fragrant garlic-herb rub until succulent and served alongside crisp-tender asparagus for a clean, nutrient-dense dinner.
INGREDIENTS
5.25 oz Beef tenderloin roast
1 tsp Extra virgin olive oil
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1 cup Asparagus spears
PREPARATION
Preheat your oven to 425°F (218°C).
Mince the garlic cloves and finely chop the fresh rosemary and thyme.
Pat the beef tenderloin dry and rub it evenly with the olive oil, sea salt, black pepper, minced garlic, and chopped herbs.
Place the seasoned beef in a roasting pan and cook for 20 to 25 minutes, or until the internal temperature reaches 135°F for medium-rare.
During the final 10 minutes of roasting, add the asparagus spears to the pan to roast until tender.
Remove from the oven and let the beef rest for at least 10 minutes to lock in the juices before slicing into medallions.
