Preheat oven to 375°F.
Slice the tops off the bell peppers and remove the seeds and membranes.
In a large skillet, heat the olive oil over medium heat and sauté the diced onion until translucent.
Add the ground turkey to the skillet, breaking it apart with a spatula, and cook until browned.
Stir in the minced garlic, oregano, smoked paprika, sea salt, and black pepper, cooking for another minute.
Pour in the tomato sauce and let the mixture simmer for 3-5 minutes until slightly thickened.
Place the bell peppers in a baking dish and spoon the turkey mixture into each cavity.
Add a splash of water to the bottom of the dish, cover with foil, and bake for 30 minutes.
Remove the foil and bake for an additional 10 minutes until the peppers are tender.
Garnish with fresh parsley before serving.
