0.75 cup Cooked white rice
1 tbsp Olive oil
3 cloves Garlic
0.5 cup Onion
0.5 cup Red bell pepper
1 tbsp Fresh parsley
0.25 tsp Black pepper
1 tbsp Lemon juice
PREPARATION
Soak the salted cod in cold water for 24 hours, changing the water at least three times to remove excess salt.
Drain the cod and place it in a pot of fresh water; bring to a boil and simmer for 15 minutes until tender.
Drain the fish, remove any skin or bones, and flake the flesh into bite-sized pieces.
In a small pot, combine the cooked white rice with half of the minced garlic and a splash of water; heat through until the garlic is fragrant.
Heat the olive oil in a large skillet over medium heat and sauté the onion, bell pepper, and remaining garlic until softened and translucent.
Add the flaked cod to the skillet and sauté for 5-7 minutes until the edges are slightly crispy and golden.
Season with black pepper and fresh lemon juice, then stir in the fresh parsley.
Serve the savory salted cod mixture over the warm garlic rice.
