Heat olive oil in a non-stick pan over medium-high heat and sear the tofu cubes for 8-10 minutes, turning occasionally until golden and crispy.
In a medium saucepan, toast the Arborio rice over medium heat for 1 minute, then add the remaining vegetable broth 0.5 cup at a time, stirring frequently until the liquid is absorbed before adding more.
Once the rice is tender, stir in the roasted carrot puree, nutritional yeast, and lemon juice until well combined and creamy.
Garnish the risotto with fresh parsley and chives, then top with the seared tofu cubes before serving warm.
