6 oz Wild Atlantic Salmon Fillet
200g Cauliflower florets
100g Asparagus spears
1 tbsp Ghee
1 tsp Extra virgin olive oil
2 cloves Garlic, minced
1 tbsp Fresh lemon juice
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
While the cauliflower steams, pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the ghee in a stainless steel or cast-iron skillet over medium-high heat until shimmering.
Place the salmon in the skillet skin-side down and sear for 4 to 5 minutes until the skin is crisp, then flip and cook for another 3 to 4 minutes until desired doneness.
Steam the asparagus spears for 4 to 5 minutes until they are bright green and tender-crisp.
Drain the steamed cauliflower and transfer to a blender or food processor with the olive oil, minced garlic, and a pinch of salt, then process until smooth and creamy.
Plate the garlic cauliflower mash alongside the steamed asparagus and the seared salmon.
