Herb-Crusted Salmon with Roasted Asparagus
Salmon fillet roasted with a savory almond-herb crust, served alongside crisp-tender asparagus for a vibrant and satisfying meal.
INGREDIENTS
7 oz Salmon fillet
1.5 cup Asparagus spears
1 tbsp Almond meal
1 tsp Dijon mustard
1 tsp Extra virgin olive oil
0.5 tsp Dried parsley
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tbsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and place them on one side of the baking sheet.
Drizzle the asparagus with olive oil and a pinch of sea salt and black pepper, tossing to coat evenly.
Place the salmon fillet on the other side of the baking sheet and pat it dry with a paper towel.
Spread the Dijon mustard evenly over the top of the salmon.
In a small bowl, mix the almond meal, dried parsley, garlic powder, and the remaining salt and pepper.
Press the almond meal mixture onto the mustard-coated salmon to create a crust.
Roast in the oven for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Drizzle the fresh lemon juice over the salmon and asparagus before serving.
