Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with tender steamed green beans and creamy garlic-infused mashed cauliflower, finished with a squeeze of bright lemon.
INGREDIENTS
8.5 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower florets
1 cup fresh Green Beans
2 cloves Garlic, minced
1 tsp Extra Virgin Olive Oil
Sea salt and black pepper to taste
Fresh lemon wedges for serving
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
Add the green beans to the steamer during the last 5 minutes of cooking until they are bright green and crisp-tender.
While vegetables steam, season the salmon fillet with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crispy and the fish is cooked through.
Transfer the steamed cauliflower to a bowl or food processor, add the minced garlic and the remaining olive oil, then mash or blend until creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side with a fresh squeeze of lemon.
