Preheat your oven to 400°F (200°C).
Heat the olive oil in a medium oven-safe skillet over medium-high heat.
Add the ground turkey to the skillet, breaking it apart with a wooden spoon until it is thoroughly browned.
Toss in the diced bell peppers and red onions, cooking for 5 minutes until the vegetables are tender and slightly caramelized.
Stir in the sea salt, black pepper, and smoked paprika to evenly coat the turkey and vegetable base.
Create three small indentations in the mixture using the back of a spoon.
Crack one egg into each indentation, taking care not to break the yolks.
Place the skillet in the oven and bake for 8 to 10 minutes, or until the whites are firm.
Remove from the oven and garnish with chopped fresh parsley before serving.
