Preheat your oven to 400°F (200°C).
Peel and cube the sweet potato into half-inch pieces. In a small bowl, toss them with the olive oil, half the sea salt, half the black pepper, and all of the smoked paprika.
Spread the sweet potatoes on a parchment-lined baking sheet and roast for 15-20 minutes until tender and slightly browned.
While potatoes roast, heat a non-stick skillet over medium-high heat. Add the ground turkey, diced onion, and diced bell pepper.
Season the turkey mixture with garlic powder and the remaining salt and pepper. Cook, breaking the meat apart with a spatula, until the turkey is browned and vegetables are soft.
Stir the fresh baby spinach into the turkey mixture until just wilted, then remove from heat.
In a small oven-safe skillet or individual baking dish, combine the roasted sweet potatoes and the turkey-spinach mixture.
Use a spoon to create two small wells in the mixture. Carefully crack one egg into each well.
Place the dish in the oven and bake for 8-12 minutes, or until the egg whites are opaque and set, but the yolks are still soft.
Remove from the oven and serve immediately while warm.
