Preheat your oven to 400°F. Scrub the potato, prick it with a fork, rub with olive oil and half the salt and pepper, then bake for 45-60 minutes until tender.
While the potato bakes, cook the bacon in a skillet until crispy. Remove, drain on a paper towel, and crumble into small bits.
In the same skillet, drain most of the bacon fat and add the ground turkey. Season with garlic powder and the remaining salt and pepper, cooking until browned and fully cooked through.
Once the potato is cool enough to handle, slice it in half lengthwise and scoop out the flesh into a bowl, leaving a thin shell.
Mash the potato flesh with the Greek yogurt until smooth, then fold in the cooked ground turkey, half of the crumbled bacon, and half of the shredded cheddar.
Spoon the mixture back into the potato shells, top with the remaining cheddar and bacon, and return to the oven for 5-10 minutes until the cheese is bubbly.
Garnish with sliced green onions and serve immediately.
