6 oz Pork tenderloin
0.5 cup Cooked brown rice
1 large Egg
0.5 cup Diced carrots
0.5 cup Frozen peas
0.25 cup Green onions
1 tsp Toasted sesame oil
1 tbsp Tamari
1 tsp Fresh ginger
1 clove Garlic
0.25 tsp Sea salt

Dice the pork tenderloin into small, bite-sized pieces and season with sea salt and black pepper.
Heat a large skillet or wok over medium-high heat with half of the sesame oil.
Add the pork to the skillet and sear until golden brown and cooked through, then remove and set aside.
Add the remaining sesame oil to the pan along with diced carrots, minced garlic, and grated ginger, sautéing until fragrant and tender.
Push the vegetables to the side, crack the egg into the center, and scramble until just set.
Stir in the cooked brown rice, frozen peas, and cooked pork, tossing everything together.
Drizzle with tamari and continue to stir-fry for 2-3 minutes until the rice is slightly toasted and everything is well combined.
Garnish with sliced green onions before serving.
