Crispy panko-coated bites filled with creamy chickpea pasta and savory ground turkey, shallow-fried in avocado oil until they reach a perfect golden crunch.
INGREDIENTS
1.5 oz Chickpea pasta
2 oz 99% lean ground turkey
1 oz Sharp cheddar cheese
0.25 cup Nonfat Greek yogurt
2 large Egg whites
2 tbsp Whole wheat panko breadcrumbs
0.5 tbsp Avocado oil
1 tbsp Nutritional yeast
0.25 tsp Garlic powder
0.25 tsp Onion powder
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Boil the chickpea pasta in salted water until tender, then drain and finely chop into small bits.
In a small skillet, cook the ground turkey over medium heat until browned and fully cooked through.
In a mixing bowl, combine the chopped pasta, cooked turkey, shredded cheddar cheese, Greek yogurt, nutritional yeast, garlic powder, onion powder, salt, and pepper.
Stir the mixture until well combined and then place it in the freezer for 10 minutes to firm up.
Scoop the mixture and roll into 1-inch balls using your hands.
Whisk the egg whites in a small bowl and place the panko breadcrumbs in a separate shallow dish.
Dip each ball into the egg whites, then roll in the panko breadcrumbs until evenly coated.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Carefully place the balls in the hot oil and fry for 2-3 minutes per side until they are golden brown and crispy on all sides.
