Pan-Seared Beef Fillet with Garlic Butter
Pan-seared beef fillet basted in aromatic garlic ghee, served alongside crisp-tender roasted asparagus and gold potatoes for a savory, melt-in-your-mouth experience.
INGREDIENTS
5 oz Beef fillet
0.25 tbsp Ghee
2 cloves Garlic
1 cup Asparagus
4 oz Baby gold potatoes
0.25 tbsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh rosemary
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Halve the baby gold potatoes and trim the woody ends off the asparagus spears.
Toss the potatoes and asparagus on the baking sheet with olive oil, half the sea salt, and half the black pepper.
Roast the vegetables for 18-20 minutes until the potatoes are golden and the asparagus is tender.
Pat the beef fillet completely dry with paper towels and season both sides with the remaining salt and pepper.
Heat a heavy cast-iron skillet over medium-high heat until very hot, then sear the fillet for 3-4 minutes per side.
Lower the heat to medium and add the ghee, smashed garlic cloves, and fresh rosemary to the skillet.
Tilt the pan and use a spoon to continuously baste the beef with the foaming garlic ghee for 1 minute.
Transfer the beef to a cutting board and let it rest for 5 minutes before serving with the roasted vegetables.
