Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon fillet served with tender garlic-infused green beans and creamy cauliflower mash, finished with a bright squeeze of lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
1 clove Garlic, minced
Salt and black pepper to taste
Fresh lemon wedge for serving
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, heat a non-stick skillet over medium-high heat with half of the olive oil.
Season the salmon fillet with salt and pepper, then place in the hot skillet skin-side down.
Sear the salmon for 4-5 minutes per side until the skin is crisp and the flesh is cooked to your preference, then remove from the pan.
In the same skillet, add the remaining olive oil, green beans, and minced garlic, sautéing for 5-7 minutes until the beans are tender-crisp.
Drain the steamed cauliflower and transfer to a blender or food processor with the ghee and a pinch of salt.
Blend the cauliflower until smooth and creamy.
Plate the salmon alongside the garlic green beans and cauliflower mash, finishing with a fresh squeeze of lemon juice.
