1.5 oz Whole grain penne pasta
1 tsp Olive oil
2 tbsp Plain non-fat Greek yogurt
1 tbsp Grated parmesan cheese
2 cloves Garlic
1 cup Fresh baby spinach
0.25 tsp Sea salt

PREPARATION
Boil a pot of water and cook the whole grain penne until al dente.
Season the chicken breast with half of the sea salt and black pepper.
Heat olive oil in a skillet over medium-high heat and sear the chicken for 6 minutes per side.
Remove chicken to rest for 2 minutes, then slice into thin strips.
In the same skillet, add minced garlic and sauté for 30 seconds.
Lower heat and whisk in the chicken broth, Greek yogurt, and parmesan cheese until smooth.
Stir in the fresh baby spinach until just wilted.
Toss the cooked pasta and sliced chicken into the skillet to coat in the sauce.
Season with the remaining sea salt and black pepper before serving.
