Garlic Herb Beef Roast with Root Vegetables
Slow-roasted lean beef rubbed with aromatic garlic and herbs, served with a medley of tender, caramelized root vegetables.
INGREDIENTS
5 oz Beef eye of round roast
0.5 tbsp Extra virgin olive oil
2 cloves Garlic
1 tsp Dried rosemary
1 tsp Dried thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1 cup Carrots
0.5 cup Red potato
PREPARATION
Preheat oven to 375°F (190°C).
In a small bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and pepper to create a herb paste.
Place the beef roast in the center of a roasting pan and rub the herb paste evenly over all sides of the meat.
Surround the roast with the chopped carrots and cubed potatoes, tossing them slightly in any excess herb oil in the pan.
Roast in the oven for 45 to 55 minutes, or until the beef reaches your desired level of doneness.
Transfer the beef to a cutting board and let it rest for 10 minutes to lock in the juices before slicing against the grain.
