Garlic Herb Roasted Beef and Root Vegetables
Lean beef sirloin roasted to tender perfection with earthy root vegetables and aromatic garlic for a savory, herb-infused meal.
INGREDIENTS
6 oz beef sirloin
1 cup carrots
0.5 cup parsnips
1 tbsp extra virgin olive oil
2 cloves garlic
1 tsp fresh rosemary
1 tsp fresh thyme
0.5 tsp sea salt
0.25 tsp black pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Peel and chop the carrots and parsnips into uniform 1-inch chunks.
Mince the garlic cloves and finely chop the fresh rosemary and thyme.
In a medium bowl, toss the chopped carrots and parsnips with half of the olive oil, half of the sea salt, and half of the black pepper.
Rub the beef sirloin with the remaining olive oil, minced garlic, fresh rosemary, fresh thyme, and the remaining salt and pepper.
Spread the vegetables in a single layer on a large parchment-lined sheet pan and roast for 15 minutes.
Move the vegetables to the sides of the pan, place the seasoned beef in the center, and roast for another 15-20 minutes until the beef reaches your desired internal temperature.
Remove from the oven and let the beef rest for 5 minutes before slicing against the grain to serve alongside the golden roasted vegetables.
