Baked Ziti with Ricotta and Marinara
Lean ground turkey and chickpea pasta baked in a rich herb-infused marinara, topped with a creamy dollop of ricotta for a velvety finish.
INGREDIENTS
5 oz Ground turkey (93% lean)
1.25 oz Chickpea ziti pasta
0.5 cup Marinara sauce (no sugar added)
2 tbsp Part-skim ricotta cheese
0.5 oz Part-skim shredded mozzarella cheese
1 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Dried oregano
1 clove Garlic
1 tbsp Fresh basil
PREPARATION
Preheat your oven to 375°F (190°C).
Bring a pot of salted water to a boil and cook the chickpea ziti for 2 minutes less than the package instructions to keep it al dente.
While the pasta cooks, heat the olive oil in a skillet over medium heat and sauté the minced garlic for 30 seconds until fragrant.
Add the ground turkey to the skillet, seasoning with sea salt, black pepper, and dried oregano, and cook until browned and crumbled.
Stir the marinara sauce into the turkey and let it simmer for 3 minutes.
Drain the pasta and toss it directly into the skillet with the meat sauce until well coated.
Transfer the mixture to a small oven-safe baking dish, then dollop the ricotta cheese over the top and sprinkle with shredded mozzarella.
Bake for 15 minutes until the cheese is melted and bubbling.
Remove from the oven and garnish with freshly chopped basil before serving.
