Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Chop the broccoli, red bell pepper, and zucchini into bite-sized pieces and place them in a large mixing bowl.
Mince the garlic cloves and add them to the bowl with the vegetables.
Drizzle half of the olive oil over the vegetables and season with half of the oregano, thyme, salt, and pepper before tossing well to coat.
Spread the vegetables in a single layer on the prepared baking sheet and roast for 15-20 minutes until tender and slightly charred.
While the vegetables roast, season the chicken breast evenly with the remaining herbs, salt, and pepper.
Heat the remaining olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes per side until golden brown and cooked through.
Once the chicken is done, let it rest for 5 minutes before slicing into strips.
Squeeze fresh lemon juice over the chicken and roasted vegetables just before serving for a bright finish.
