PREPARATION
Pat the beef short ribs dry and season all sides with sea salt and black pepper.
Heat avocado oil in a small Dutch oven over medium-high heat and sear the ribs until browned on all sides.
Remove the ribs and add diced onion, carrots, and celery to the pot, sautéing until softened.
