Garlic-Herb Roasted Salmon with Asparagus
Tender salmon fillets roasted with a fragrant garlic-herb rub and crisp asparagus spears, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus spears
0.5 tbsp Olive oil
1 clove Garlic
1 tsp Fresh parsley
1 tsp Fresh dill
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 medium Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
Trim the woody ends off the asparagus spears and place them on one side of the prepared baking sheet.
Pat the salmon fillet dry with a paper towel to ensure a good sear and place it on the other side of the sheet.
In a small bowl, whisk together the olive oil, minced garlic, chopped parsley, chopped dill, sea salt, and black pepper.
Brush the herb and oil mixture generously over both the salmon fillet and the asparagus until they are evenly coated.
Place lemon slices on top of the salmon and roast for 12-15 minutes until the salmon flakes easily with a fork and the asparagus is tender-crisp.
