0.25 cup Cooked jasmine rice
0.5 cup Cauliflower rice
0.5 cup Kimchi
1 tbsp Tamari
1 tsp Toasted sesame oil
2 medium Scallions
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Finely dice the pork belly and mince the garlic clove.
In a large non-stick skillet over medium-high heat, add the pork belly and cook until the fat renders and the meat becomes crisp.
Add the lean ground pork and minced garlic to the skillet, breaking up the meat with a spatula until fully browned.
Stir in the chopped kimchi, cooked jasmine rice, and cauliflower rice, tossing well to combine with the pork and rendered fat.
Add the tamari, toasted sesame oil, sea salt, and black pepper, then continue to sauté for 3-4 minutes until the cauliflower rice is tender.
Push the rice mixture to the sides of the pan to create an opening in the center.
Crack the eggs into the center of the pan and cook until the whites are set but the yolks remain runny.
Thinly slice the scallions and sprinkle them over the rice before serving immediately.
