Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Peel the sweet potato and cut it into 1/2-inch cubes.
Toss the sweet potato cubes with 0.5 tbsp of olive oil, 0.5 tsp of smoked paprika, and a pinch of sea salt.
Spread the sweet potatoes in a single layer on the baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
While the potatoes roast, combine the ground turkey, garlic powder, onion powder, remaining 0.5 tsp smoked paprika, sea salt, and black pepper in a mixing bowl.
Form the turkey mixture into two even-sized patties, about 3/4-inch thick.
Heat the remaining 0.5 tbsp of olive oil in a non-stick skillet over medium heat.
Place the patties in the skillet and cook for 5-6 minutes per side, or until the internal temperature reaches 165°F.
During the last minute of cooking, brush the top of each patty with the maple syrup to create a sticky glaze.
Arrange the fresh baby spinach on a plate, top with the roasted sweet potatoes, and place the maple-glazed turkey patties on the side.
