Heat the extra virgin olive oil in a large cast-iron skillet over medium-high heat.
Add the diced sweet potatoes to the skillet and sauté for 8-10 minutes, stirring occasionally, until tender and slightly browned.
Add the ground turkey to the skillet, breaking it up with a wooden spoon or spatula.
Season the mixture with sea salt, black pepper, garlic powder, and smoked paprika.
Cook until the turkey is fully browned and no longer pink, approximately 5-7 minutes.
Stir in the fresh spinach and cook for 1 minute until just wilted.
Use your spoon to create two small wells in the turkey and potato mixture.
Carefully crack one egg into each well.
Reduce the heat to medium-low, cover the skillet with a lid, and cook for 2-4 minutes until the egg whites are opaque but the yolks are still soft.
Remove from heat and serve immediately directly from the skillet.
