Roast the vegetables in the oven for 18-20 minutes until they are tender and have slightly charred edges.
While the vegetables roast, heat the remaining 0.5 tbsp of olive oil in a large non-stick skillet over medium-high heat.
Add the tofu cubes to the skillet and sear for 3-4 minutes per side until each surface is golden brown and crispy.
Remove the skillet from the heat, drizzle the tofu with tamari, and toss quickly to glaze before serving alongside the roasted vegetables.
